It’s been a busy couple weeks over here, and I totally forgot to post a round-up for Week 2 of Vegan MoFo 2014. Oops! So, this one shares highlight’s from the past couple weeks.
Between tackling some things around the house I let slide during school, working on business/blog stuff, and gearing up for my sister’s wedding (in 9 days!) and my upcoming trip to India (in 2 weeks!), I haven’t been doing much elaborate cooking. Instead, I’ve been relying a lot on simple meals like smoothies, oatmeal, salads, and sautés. There was a major avocado sale at my local grocery store, so there has been a lot of avocado toast. And this past week has been all about the scrambles: chickpea, tofu, and tofu/rice. Yum!

Early on, I perfected a fig smoothie recipe and shared the recipe for this delicious Blueberry Fig Smoothie.
I fell in love with this dish: coconut oil sautéed zucchini and swiss chard with ginger, lemon, and red pepper flakes. Served with some brown rice. So simple, healthy, and satisfying. I’ll be sharing soon!
A big bowl of chocolate maca oatmeal, topped with seeds and cacao nibs, to power me through a little hike around Buntzen Lake.
Scrambled Chickpeas from Isa Does It (minus the onion). With Sriracha avocado toast of course. These were so good! Going on repeat, for sure.
And scrambled tofu, with garlic, Bragg’s, kale, turmeric, and red pepper.
A smoothie bowl lunch packed with zucchini (yes!), blueberries, banana, raspberries, Vega Viva Vanilla Protein Smoothie, red leaf lettuce, cacao, and maca. Topped with granola, coconut flakes, and cacao nibs.
I hope everyone is enjoying the month of September and the Vegan Month of Food 2014! I’ll try to share one more round-up post at the end of September, but I can’t guarantee anything since it will be in the couple days I have between wedding stuff and leaving on my trip. Either way, I will definitely check-in before I go!
